Kale Iron Wo+Man Salad


Iron (Wo)Man Salad!

This recipe creates 5-8 Servings. I create extra for the next night! 

The Recipe:

  • 2 C Pearled Barley (cook, cool and mix with the fresh goods), you can exchange for black rice or quinoa for gluten-free version.
  • 1 Bunch Black Kale
  • 1 C Dried Cranberries
  • 1 Small Purple Cabbage
  • 1 Pack of Fresh Mint (1 C)
  • 2 T Olive Oil (feel it)
  • 1 Lemon (for the juice)
  • 1 T Sea Salt

    Chop up everything into tiny bits and mix!
